Sevenband Grouper (Mahata) & Longtooth Grouper (Kue)

A pair of ultra-premium varieties, the result of success at fish seed production after some 40 years of efforts. Kue is a large fish that grows to 50 kg in the wild (ordinarily shipped at weights around 3–5 kg when aquacultured), an outstanding ingredient for soups and nabe hot pots, as well as sashimi.

About Sevenband & Longtooth Grouper

Mahata and kue are related types of groupers that grow to lengths over 1 m. After beginning research on the sevenband grouper in 1980 and the longtooth grouper in 1992, Ehime Prefecture has now succeeded in stable production of juvenile fish of both species. After being raised for about three years for the sevenband grouper and four years for the longtooth grouper, the fish are shipped at weights of around 2 kg.
A special combination of factors many years of research, improved aquaculturing techniques, and the pristine marine environment of the Uwa Sea has culminated in the cultivation of these fish, appreciated for their premium quality considered to exceed even that of the red seabream and Japanese amberjack.

    Ehime Prefecture began researching the sevenband grouper in 1980 and the longtooth grouper in 1992. Success in stable, large-scale production of juveniles of the species incubated from eggs was finally reached in the early 2000s. The supply of these juvenile fish has enabled aquaculturing of both sevenband and longtooth groupers.

    Both varieties are popular items that are shipped to high-end restaurants in Tokyo and many other places. Sevenband grouper is particularly valued in gourmet Chinese cooking, while longtooth grouper is especially popular as an ingredient in nabe hot pots. With their collagen-rich meat, both sevenband and longtooth groupers are popular with women as well.
