A classic sushi standard supplying cuts from red-tinged akami to fatty toro, popular not only in Japan but overseas as well. Ehime Prefecture began aquaculturing the fish in 2005, and many are now raised in the prefecture’s southern island region.

Aquaculturing Pacific Bluefin Tuna in Ehime Prefecture

Ehime Prefecture began aquaculturing Pacific bluefin tuna in 2005 and now ships the fish after raising them for two to three years in the local seas. While they are fed mainly live fish, including sardines and mackerel, efforts are also underway to raise the fish with solid feed in the interest of further improving the quality of their flesh and conserving the marine environment.

    As Pacific bluefin tuna are large, fast-swimming fish, it is difficult to raise them in standard sized aquaculture pens (10–12 m per side). Instead, they are raised in special larger pens about 20–50 m in diameter.
